🍕 Fig Pizza

Ingredients
- 21 g yeast (0.5 cube)
- 0.5 tsp honey
- 400 g spelt whole wheat flour (and some flour for the work surface)
- 4 tbsp olive oil
- salt
- 8 figs
- 200 g hard cheese (e.g. Pecorino)
- 1 handful arugula
Instructions
- 1. Crumble the yeast into a bowl.
- 2. Stir in the honey and 190 milliliters of lukewarm water until the mixture is smooth.
- 3. Add the flour, the olive oil, and 1 teaspoon of salt.
- 4. Knead everything into a smooth dough.
- 5. Adjust the amount of flour or water as needed to achieve the right dough consistency.
- 6. Cover the bowl and let the dough rise in a warm place for approx. 1 hour.
- 7. Wash the figs thoroughly.
- 8. Cut the figs into wedges.
- 9. Grate the cheese finely.
- 10. Sprinkle some flour on the work surface.
- 11. Knead the dough well there again.
- 12. Divide the dough into 4 equal portions.
- 13. Roll each portion into a thin oval.
- 14. Place the dough ovals on baking paper.
- 15. Sprinkle the grated cheese over the dough ovals.
- 16. Top the pizzas with the fig wedges.
- 17. Carefully lift the pizzas onto a preheated baking sheet.
- 18. Bake the pizzas in the preheated oven at 240 °C (convection: 220 °C; gas: highest setting) for 10–15 minutes until golden brown.
- 19. Wash the arugula in the meantime.
- 20. Spin the arugula dry.
- 21. Take the fig pizzas out of the oven.
- 22. Sprinkle the hot pizzas with the arugula.
- 23. Serve the pizzas immediately.
