🍰 Figs with Foam Sauce

Ingredients
- 20 g almond slices (2 tbsp)
- 4 ripe blue figs
- 4 ripe green figs
- 1 lemon
- 1 egg
- 125 ml cloudy apple juice
- 15 g honey (1 tbsp)
Instructions
- 1. Toast the sliced almonds in a pan without added fat until golden brown.
- 2. Remove the toasted almonds from the pan and set them aside.
- 3. Wash the figs thoroughly and pat them dry with a kitchen towel.
- 4. Cut the blue figs lengthwise into quarters.
- 5. Slice the green figs into thin rounds.
- 6. Arrange the prepared figs on four dessert plates.
- 7. Rinse the lemon under hot water and pat it dry.
- 8. Finely grate some of the lemon zest.
- 9. Squeeze the lemon to extract the juice.
- 10. Separate the egg by separating the yolk from the egg white.
- 11. Use the egg white for another purpose.
- 12. Whisk the egg yolk with a pinch of lemon zest, two tablespoons of lemon juice, apple juice, and honey in a metal bowl.
- 13. Place the metal bowl over a pot of hot water (hot water bath).
- 14. Beat the mixture with a hand mixer until foamy in 5 to 10 minutes.
- 15. Check if the volume has doubled and all ingredients are bound.
- 16. Pour the finished foam sauce over the figs on the plates.
- 17. Sprinkle the toasted almond slices over the sauce.
