🍽️ Fig and Redcurrant Jam

Ingredients
- 1400 g ripe figs
- 750 g red currants
- 500 g jam sugar (3:1)
- 100 ml cassis (or grenadine)
Instructions
- 1. Rinse four screw-top jars (each 400 milliliters) along with their lids using boiling water.
- 2. Let the jars drain upside down on a kitchen towel.
- 3. Quarter the figs.
- 4. Place the fig pieces with the cut side facing up on a cutting board.
- 5. Carefully scrape the fruit flesh out of the skins using a spoon.
- 6. Weigh out 800 grams of fruit flesh.
- 7. Wash the redcurrants and let them drain well.
- 8. Strip the berries from the stems using a fork.
- 9. Mix the fig fruit flesh with 700 grams of redcurrants.
- 10. Put the fruit and the sugar into a pot.
- 11. Stir the mixture thoroughly.
- 12. Bring the mixture to a boil while stirring constantly.
- 13. Let the jam bubble vigorously for at least 3 minutes.
- 14. Keep stirring to prevent burning.
- 15. Add the cassis (blackcurrant juice).
- 16. Let the mixture cook for another 1 minute.
- 17. Fill the hot liquid into the prepared jars.
- 18. Seal the jars with the lids.
- 19. Place the jars upside down for 5 minutes.
- 20. Then place the jars upright again.
