🍽️ Juicy Fig & Cranberry Bars

Ingredients
- 100 g walnut kernels
- 100 g dried fig
- 1 organic orange
- 80 g soft butter
- 100 g whole cane sugar
- 1 pinch salt
- 2 eggs
- 150 g whole wheat flour
- 2 tsp baking powder
- 100 g ground hazelnuts
- 100 g dried cranberries
- 1 tsp cocoa powder
- 0.5 tsp cardamom (or cinnamon)
Instructions
- 1. Grind the walnut kernels into a fine meal.
- 2. Dice the figs into very small cubes.
- 3. Rinse the orange under hot water and pat it dry.
- 4. Finely grate the outer zest of the orange.
- 5. Cut the orange in half and squeeze out the juice.
- 6. Mix the butter, sugar, salt, and orange zest together using a hand mixer.
- 7. Stir the eggs into the butter-sugar mixture.
- 8. Add the flour and baking powder.
- 9. Add the ground nuts, cranberries, cocoa, and cardamom.
- 10. Knead all ingredients together to form a firm dough.
- 11. Place the dough on a baking sheet lined with baking paper.
- 12. Cover the dough with cling film.
- 13. Roll out the dough flat while it is covered with the film.
- 14. Remove the cling film from the dough.
- 15. Preheat the oven to 180 °C (160 °C for fan-assisted or gas mark 2–3).
- 16. Bake the pastry for approx. 30 minutes in the oven.
- 17. Drizzle the hot pastry immediately with the orange juice.
- 18. Let the juice soak in for 5 minutes.
- 19. Cut the pastry into bars.
- 20. Let the bars cool down on the work surface.
