  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into small cubes.
  3. 3. Remove the beans from their pods.
  4. 4. Place the potato cubes and the beans into a pot.
  5. 5. Cover the ingredients completely with water.
  6. 6. Let the mixture simmer gently for about 20 minutes.
  7. 7. Drain the cooking water.
  8. 8. Cover the potatoes and beans again with fresh water.
  9. 9. Add a pinch of salt.
  10. 10. Cook the ingredients for another 30 minutes.
  11. 11. Drain any remaining water, if there is any left.
  12. 12. Press the potato-bean mixture through a food mill back into the pot.
  13. 13. Pour the olive oil in slowly and gradually.
  14. 14. Stir constantly while doing so.
  15. 15. Stop adding oil when the puree is creamy.
  16. 16. Finally, season the puree with salt to taste.
  17. 17. Serve the dish garnished with chili rings if you wish.
