🍽️ Apulian Bean and Potato Cream

Ingredients
- 500 g beans
- 300 g potatoes
- salt
- 7 tbsp olive oil
- 1 chili pepper (cut into thin rings)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small cubes.
- 3. Remove the beans from their pods.
- 4. Place the potato cubes and the beans into a pot.
- 5. Cover the ingredients completely with water.
- 6. Let the mixture simmer gently for about 20 minutes.
- 7. Drain the cooking water.
- 8. Cover the potatoes and beans again with fresh water.
- 9. Add a pinch of salt.
- 10. Cook the ingredients for another 30 minutes.
- 11. Drain any remaining water, if there is any left.
- 12. Press the potato-bean mixture through a food mill back into the pot.
- 13. Pour the olive oil in slowly and gradually.
- 14. Stir constantly while doing so.
- 15. Stop adding oil when the puree is creamy.
- 16. Finally, season the puree with salt to taste.
- 17. Serve the dish garnished with chili rings if you wish.
