🍽️ Juicy Minced Meat Loaf with Cherry Tomatoes

Ingredients
- 1 stale roll
- 3 onions
- 800 g mixed minced meat
- 50 g green bacon cubes
- 2 eggs
- 1 tsp mustard
- breadcrumbs (as needed)
- salt
- pepper (from the mill)
- 300 g cherry tomatoes
- 1 tbsp freshly chopped basil (for sprinkling)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Place the bread roll in a bowl with cold water and let it soak.
- 3. Peel the onions and cut them into very small cubes.
- 4. Squeeze the soaked bread roll firmly with your hands until no water remains.
- 5. Add the squeezed bread roll to a large bowl along with the minced meat, onion cubes, bacon, eggs, mustard, and breadcrumbs.
- 6. Mix all ingredients thoroughly by hand or with a spoon until a homogeneous mixture forms.
- 7. Season the meat mixture with salt and pepper to taste.
- 8. Line a small loaf pan with aluminum foil.
- 9. Fill the meat mixture into the prepared pan and smooth it out.
- 10. Place the pan in the preheated oven and bake the loaf for about 60 minutes.
- 11. Rinse the cherry tomatoes under running water.
- 12. Pat the tomatoes dry with a kitchen towel.
- 13. Remove the loaf from the oven briefly after 50 minutes of baking time.
- 14. Distribute the prepared tomatoes evenly over the surface of the loaf.
- 15. Lightly salt and pepper the tomatoes.
- 16. Place the loaf back in the oven and finish baking it for the remaining time.
- 17. Remove the finished loaf from the oven.
- 18. Carefully loosen the loaf from the pan and lift it onto a serving plate.
- 19. Sprinkle fresh basil over the loaf.
- 20. Slice the loaf and serve it.
