🍽️ Fresh Pasta Salad with Salami and Vegetables

Ingredients
- 600 g bow-tie pasta
- 0.125 l olive oil
- 200 ml red wine vinegar
- salt (pepper)
- 3 garlic cloves
- 1 bunch parsley
- 1 bunch basil
- 300 g salami
- 150 g carrots
- 150 g cucumber
- 200 g mushrooms
Instructions
- 1. Boil plenty of water in a pot and add some salt.
- 2. Cook the farfalle pasta in it for exactly as long as stated on the package.
- 3. Drain the pasta and rinse it briefly with cold water so they do not stick together.
- 4. Mix oil, vinegar, salt, and pepper in a small bowl to create a marinade.
- 5. Peel the garlic clove and press the garlic directly into the marinade.
- 6. Wash the fresh herbs and shake them dry.
- 7. Save a few nice basil leaves for decoration.
- 8. Roughly chop the remaining basil and the other herbs.
- 9. Stir the chopped herbs into the marinade.
- 10. Remove the skin from the salami and cut it into thin strips.
- 11. Peel the carrots and grate them coarsely.
- 12. Wash the cucumber and scrape out the seeds with a spoon.
- 13. Cut the cucumber flesh into fine cubes.
- 14. Clean the mushrooms and slice them into thin pieces.
- 15. Add the pasta, salami, vegetables, and marinade to a large bowl.
- 16. Mix everything well together.
- 17. Let the salad marinate in the refrigerator for several hours.
- 18. Sprinkle the finished salad with the reserved basil leaves.
