🍽️ Farfalle with Chicken Breast and Peanuts

Ingredients
- 600 g chicken breast fillet
- 1 tsp sambal oelek
- 3 tbsp peanut oil
- 2 tsp sesame oil
- 400 g whole grain pasta (farfalle)
- salt
- 70 g peanuts
- 2 organic limes
- 3 tbsp peanut butter (15 g each)
- 2 tsp soy sauce
- 0.5 bunch chives (10 g)
- 1 handful mint
Instructions
- 1. Pat the chicken breast fillet dry with a kitchen towel.
- 2. Cut the meat into thin strips.
- 3. Mix the meat strips with sambal oelek and the two oils.
- 4. Heat a frying pan.
- 5. Fry the meat in it for 3 minutes over medium heat.
- 6. Remove the meat from the pan and set it aside.
- 7. Cook the pasta in plenty of boiling salted water for 9 to 11 minutes until al dente.
- 8. Drain the pasta.
- 9. Let the pasta drain.
- 10. Chop the peanuts.
- 11. Toast the chopped peanuts in the pan until golden yellow.
- 12. Squeeze the juice from 1 1/2 limes.
- 13. Add the peanut butter.
- 14. Deglaze the pan with the lime juice and soy sauce.
- 15. Add the prepared meat back into the pan.
- 16. Toss the drained pasta with the pan contents.
- 17. Wash the herbs.
- 18. Chop the herbs finely.
- 19. Cut the remaining half of the lime into wedges.
- 20. Plate the pasta on dishes.
- 21. Sprinkle the pasta with the herbs.
- 22. Garnish the dishes with the lime wedges.
