🍽️ Farfalle with Walnut Cream

Ingredients
- 100 g walnuts
- 3 tbsp butter
- 150 g crème fraîche
- 30 g freshly grated parmesan
- salt
- pepper from the mill
- 500 g bow-tie pasta (farfalle)
- fresh herb leaves (for garnish)
Instructions
- 1. Set aside a few whole walnuts and finely grind the rest. Heat two tablespoons of butter in a pan and lightly toast the ground walnuts in it.
- 2. Stir in crème fraîche (a sour cream) and bring the mixture to a boil while stirring. Stir in the Parmesan and season everything to taste with salt and pepper.
- 3. Cook the farfalle pasta in plenty of salted water according to package instructions until al dente (firm to the bite). Heat the remaining butter and briefly toast the whole walnuts in it.
- 4. Take three to five tablespoons of the pasta cooking water. Drain the pasta and let it drip dry well. Mix the farfalle with the cooking water and the walnut sauce, serve on plates and sprinkle with the toasted walnuts. Garnish with fresh herbs.
