🍽️ Crispy Falafel Waffles with Mint Yogurt

Ingredients
- 3 eggs
- 480 g chickpeas (can; drained weight)
- 2 tsp baking powder
- 6 tbsp olive oil
- 1 handful cilantro (5 g each)
- 1 handful parsley (5 g each)
- 0.5 lemon (juice)
- 1 tsp cumin
- salt
- 1 garlic clove
- 280 g Greek yogurt
- pepper
- 1 handful mint (5 g each)
Instructions
- 1. Separate the eggs. Use the yolks for another purpose.
- 2. Add the chickpeas, baking powder, egg whites, and 4 tablespoons of olive oil to a blender.
- 3. Wash the cilantro and parsley. Shake them dry.
- 4. Set aside some cilantro leaves for garnish.
- 5. Add the remaining herbs, lemon juice, cumin, and salt to the blender.
- 6. Blend everything into a fine mixture.
- 7. Preheat the waffle iron.
- 8. Brush the waffle iron with a little oil.
- 9. Bake the mixture in portions to make 4 falafel waffles.
- 10. Let the waffles cool on a plate.
- 11. Keep the waffles warm in the oven if you like.
- 12. Peel the garlic and chop it finely.
- 13. Mix the garlic with the yogurt.
- 14. Season the yogurt mixture with salt and pepper.
- 15. Wash the mint and shake it dry.
- 16. Pluck some mint leaves for garnish and set them aside.
- 17. Finely chop the rest of the mint.
- 18. Stir the chopped mint into the yogurt.
- 19. Place a dollop of mint yogurt on the falafel waffles.
- 20. Garnish the waffles with the reserved cilantro and mint leaves.
