🍽️ Crispy Falafel with Fresh Zucchini Salad and Sesame Yogurt

Ingredients
- 200 g falafel (ready-made product, refrigerated section)
- 450 g small zucchini (3 small zucchini)
- 0.5 bunch mint
- 1 lemon
- 1 tsp honey
- salt
- pepper
- 2 tbsp olive oil
- 300 g yogurt (1.5% fat)
- 1 tbsp tahini
- 1 pinch ground cardamom
- 1 tbsp sesame seeds
Instructions
- 1. Preheat your oven according to the package instructions for the falafel.
- 2. Place the falafel in a baking dish and bake in the oven until crispy.
- 3. Wash the zucchini thoroughly and dry it with a kitchen towel.
- 4. Slice the zucchini lengthwise into very thin slices, for example using a vegetable peeler.
- 5. Wash the mint and shake it dry so that no water droplets remain.
- 6. Pluck the mint leaves from the stems and chop them roughly.
- 7. Put the zucchini slices and the chopped mint into a large salad bowl.
- 8. Cut the lemon in half and squeeze the juice into a small bowl.
- 9. Whisk the lemon juice with honey, salt, pepper, and oil to make a dressing sauce.
- 10. Pour the dressing over the zucchini and mint and mix everything well.
- 11. Stir the yogurt in a separate bowl with the tahini paste and cardamom.
- 12. Season the yogurt dip with a little salt.
- 13. Sprinkle the finished yogurt dip with sesame seeds.
- 14. Serve the warm falafel together with the zucchini salad and the sesame yogurt dip.
