🍽️ Crispy Falafel with Creamy Hummus

Ingredients
- 125 g dried fava beans (broad beans)
- 125 g dried chickpeas
- 1 onion
- 1 garlic clove
- 0.5 handful cilantro leaves
- salt
- cayenne pepper
- 0.5 tsp ground cumin
- 1 tbsp lemon juice
- vegetable oil (for frying)
- 200 g chickpeas (from the can)
- 2 garlic cloves
- salt
- 1 tbsp tahini (sesame paste from the jar)
- 1 tsp lemon juice
- ground cumin
- 2 tbsp sesame seeds
- 1 tbsp olive oil
Instructions
- 1. Thoroughly wash the two types of beans.
- 2. Place the beans in a large bowl and cover them with plenty of water.
- 3. Let the beans soak in the water for about 12 hours.
- 4. Pour the chickpeas for the hummus into a colander.
- 5. Rinse the chickpeas under cold running water.
- 6. Puree the chickpeas with a hand blender until smooth.
- 7. Peel the garlic cloves and chop them finely.
- 8. Grind the chopped garlic with a pinch of salt into a paste.
- 9. Add the garlic paste to the pureed chickpeas.
- 10. Stir in tahini, lemon juice, cumin, one teaspoon of sesame seeds, and oil into the mixture.
- 11. Whisk the ingredients until you have a smooth cream.
- 12. Add a small splash of cold water if needed to loosen the consistency.
- 13. Finally, season the hummus with salt to taste.
- 14. Fill the hummus into small bowls.
- 15. Sprinkle the remaining sesame seeds over the hummus.
- 16. Remove the detached hulls from the soaked beans.
- 17. Drain the beans.
- 18. Peel the onion and the garlic.
- 19. Chop the onion and garlic roughly.
- 20. Wash the coriander and shake it dry.
- 21. Finely chop the coriander leaves.
- 22. Place the beans, onion, garlic, and coriander into the food processor.
- 23. Puree the mixture into a fine paste.
- 24. Season the paste with salt, pepper, lemon juice, and cumin.
- 25. Moisten your hands with a little water.
- 26. Shape the bean mixture into walnut-sized balls using your damp hands.
- 27. Heat oil in a deep pan or pot.
- 28. Fry the falafel in batches in the hot oil.
- 29. Fry the balls for about 2 to 3 minutes until golden brown.
- 30. Remove the falafel from the oil and let them drain on kitchen paper.
- 31. Place the finished falafel into bowls.
- 32. Serve the falafel together with the hummus.
