  1. 1. Thoroughly wash the kumquats under running water.
  2. 2. Dry the fruits with a kitchen towel.
  3. 3. Cut the kumquats into small cubes.
  4. 4. Heat the butter in a pan.
  5. 5. Sauté the kumquat cubes in it, stirring constantly, for about 3 minutes.
  6. 6. Deglaze the fruits with the orange juice.
  7. 7. Season the mixture with coriander.
  8. 8. Let the sauce reduce briefly.
  9. 9. Remove the pan from the heat.
  10. 10. Let the compote mixture cool down to lukewarm.
  11. 11. Cut the papaya in half lengthwise.
  12. 12. Scoop out the seeds from the papaya halves.
  13. 13. Peel the papaya halves.
  14. 14. Cut the peeled papaya halves into wedges.
  15. 15. Distribute the cooled compote onto plates.
  16. 16. Arrange the papaya wedges on top of the compote.
  17. 17. Add a dollop of whipped cream on top.
