🍝 Exotic Pasta with Lime and Physalis Sauce

Ingredients
- 4 unpeeled limes
- 400 g physalis
- 30 g ginger
- 500 g ribbon noodles
- salt
- 4 tbsp soybean oil
- 3 tbsp agave syrup
- 250 ml soy cream
- pepper (from the mill)
Instructions
- 1. Rinse the limes under hot water and pat them dry.
- 2. Finely grate the lime zest and squeeze out the juice.
- 3. Remove the physalis fruits from their husks and cut them in half.
- 4. Peel the ginger and chop it finely.
- 5. Cook the pasta in boiling salted water until al dente (firm to the bite).
- 6. Pour the oil into a hot wok.
- 7. Sauté the chopped ginger in the oil.
- 8. Deglaze the pan with the lime juice.
- 9. Stir in the tamarind paste (a thick, sweet sauce).
- 10. Pour in the cream.
- 11. Simmer the sauce over low heat for 2 to 3 minutes.
- 12. Add the drained pasta to the sauce.
- 13. Add half of the lime zest to the sauce.
- 14. Add the halved physalis fruits to the sauce.
- 15. Toss everything gently until the pasta and fruits are coated with the sauce.
- 16. Season the sauce with salt and pepper to taste.
- 17. Sprinkle the finished pasta with the remaining lime zest.
- 18. Serve the pasta immediately.
