  1. 1. Toast the coriander seeds in a pan without oil until fragrant. Remove them from the pan and grind them into a fine powder using a mortar.
  2. 2. Peel the mangoes and cut the flesh away from the pit. Dice the flesh and weigh out approximately 1 kg.
  3. 3. Peel the ginger and chop it finely.
  4. 4. Add the mango cubes, ginger, ground coriander powder, sugar, and pandan leaves to a large pot. Mix everything well.
  5. 5. Bring the mixture to a boil while stirring. Let it bubble and cook for about 4 minutes.
  6. 6. Perform a setting test to check if the jam is firm enough. Remove the pandan leaves and puree the jam until smooth.
  7. 7. Fill the hot jam into clean jars to the brim. Turn the jars upside down and let them cool.
