  1. 1. Rinse the chicken under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Divide the chicken into 8 equal pieces.
  4. 4. Season the meat pieces generously with salt and pepper.
  5. 5. Heat 1 tablespoon of oil in a casserole dish.
  6. 6. Fry the chicken pieces on all sides over high heat.
  7. 7. Remove the browned chicken pieces from the pot and set them aside.
  8. 8. Peel the onion and dice it finely.
  9. 9. Roughly chop the chestnuts.
  10. 10. Fry the onions and chestnuts in the remaining fat until lightly golden.
  11. 11. Deglaze the vegetables with wine and some broth.
  12. 12. Season the sauce again with salt and pepper.
  13. 13. Return the chicken to the pot.
  14. 14. Let the dish simmer gently under a lid for about 25 minutes.
  15. 15. Stir the dish occasionally.
  16. 16. Add a little more broth if necessary to prevent sticking.
  17. 17. Taste the dish at the end and adjust the seasoning with salt and pepper if needed.
  18. 18. Garnish the finished dish with fresh chopped parsley.
  19. 19. Serve the chicken with couscous on the side according to your preference.
