  4. 4. Roughly chop the herbs.
  5. 5. Place the chopped herbs into a clean jar.
  6. 6. Add the peppercorns.
  7. 7. Add the juniper berries.
  8. 8. Add the bay leaf.
  9. 9. Pour the vinegar over the spices.
  10. 10. Seal the jar tightly.
  11. 11. Place the jar in a cool, dark spot.
  12. 12. Let the vinegar infuse for about one week to allow the flavors to develop.
  13. 13. Strain the vinegar through a fine sieve to remove the solid ingredients.
  14. 14. Pour the finished vinegar into a clean bottle or jar.
  15. 15. Store the vinegar in a cool place.
