  1. 1. Mix flour, cocoa, espresso powder, sifted powdered sugar, and vanilla sugar in a bowl.
  2. 2. Chop the butter into the flour mixture using a dough scraper.
  3. 3. Knead the ingredients quickly into a smooth dough.
  4. 4. Cover the dough and refrigerate for approx. 30 minutes.
  5. 5. Preheat the oven to 180°C.
  6. 6. Line a baking tray with baking paper.
  7. 7. Shape the dough into a long roll.
  8. 8. Divide the roll into 16 equal pieces.
  9. 9. Shape each piece into a ball.
  10. 10. Place the balls on the prepared tray.
  11. 11. Press grooves into the cookies with a fork.
  12. 12. Bake the cookies for 8 to 12 minutes until golden brown.
  13. 13. Let the cookies cool on a wire rack.
