🍰 Crunchy Espresso Cookies

Ingredients
- 120 g flour
- 20 g cocoa powder
- 1 tsp instant espresso powder
- 50 g powdered sugar
- 2 tsp vanilla sugar
- 120 g soft butter
- powdered sugar (for dusting)
Instructions
- 1. Mix flour, cocoa, espresso powder, sifted powdered sugar, and vanilla sugar in a bowl.
- 2. Chop the butter into the flour mixture using a dough scraper.
- 3. Knead the ingredients quickly into a smooth dough.
- 4. Cover the dough and refrigerate for approx. 30 minutes.
- 5. Preheat the oven to 180°C.
- 6. Line a baking tray with baking paper.
- 7. Shape the dough into a long roll.
- 8. Divide the roll into 16 equal pieces.
- 9. Shape each piece into a ball.
- 10. Place the balls on the prepared tray.
- 11. Press grooves into the cookies with a fork.
- 12. Bake the cookies for 8 to 12 minutes until golden brown.
- 13. Let the cookies cool on a wire rack.
- 14. Dust the cooled cookies with powdered sugar before serving.
