🍽️ Crunchy Peanut Butter Cookies with Chocolate Glaze

Ingredients
- 180 g Butter
- 70 g Honey
- 2 Eggs
- 550 g Spelt flour Type 1050
- 100 g Peanut butter
- 1 tsp Baking powder
- 150 g Dark chocolate
- 1 tbsp Coconut oil
- 0.5 tsp Cayenne pepper
Instructions
- 1. Cut the butter into small cubes.
- 2. Place the butter cubes in a large mixing bowl.
- 3. Set the mixing bowl briefly in a container of hot water.
- 4. Wait until the butter becomes soft and pliable.
- 5. Remove the bowl from the hot water.
- 6. Beat the soft butter together with the honey, peanut butter, and eggs until creamy.
- 7. Add the flour and baking powder to the mixture.
- 8. Knead everything into a smooth dough.
- 9. Form small balls from the dough, about the size of a walnut.
- 10. Press the dough balls slightly flat.
- 11. Line a baking sheet with parchment paper.
- 12. Place the cookies on the sheet, leaving some space between them.
- 13. Preheat the oven to 200 degrees Celsius (180 degrees Celsius with fan or gas level 3).
- 14. Bake the cookies for about 12 minutes.
- 15. Remove the cookies when they are light yellow.
- 16. Place the cookies on a wire rack.
- 17. Let the cookies cool completely.
- 18. Melt the dark chocolate and coconut oil together in a double boiler.
- 19. Wait until the mixture is liquid.
- 20. Stir the cayenne pepper into the melted chocolate.
- 21. Fill the chocolate mixture into a piping bag.
- 22. Squeeze a small drop of chocolate onto each cooled cookie.
- 23. Wait briefly for the chocolate to set slightly.
- 24. Serve the finished cookies.
