🍰 Grilled Strawberry Rosemary Skewers with Quark Mousse

Ingredients
- 24 large ripe strawberries
- 8 sprigs rosemary
- 3 tbsp liquid honey
- 1 organic lemon
- 100 g low-fat quark
- 100 ml whipping cream
Instructions
- 1. Remove the green stems from the strawberries and wash them thoroughly.
- 2. Wash the rosemary sprigs and shake them dry.
- 3. Strip the needles from the rosemary sprigs, leaving only the tip.
- 4. Thread the washed strawberries onto the prepared rosemary sprigs.
- 5. Wash the lemon under hot water and pat it dry.
- 6. Finely grate the lemon zest.
- 7. Squeeze the juice from the lemon.
- 8. Whisk two tablespoons of honey with the lemon juice in a small bowl.
- 9. Brush the strawberry skewers with the honey-lemon mixture.
- 10. Place the skewers on the hot grill.
- 11. Grill the strawberries for about five minutes.
- 12. Turn the skewers repeatedly while grilling.
- 13. Brush the strawberries with the honey mixture repeatedly during grilling.
- 14. Add the remaining honey to a bowl with quark (a type of fresh cheese).
- 15. Whisk the quark and honey until creamy using the beaters of a hand mixer.
- 16. Whip the cream until stiff.
- 17. Fold the lemon zest into the whipped cream.
- 18. Gently fold the lemon-cream mixture into the quark.
- 19. Arrange the grilled strawberry skewers on four plates.
- 20. Serve the skewers together with the quark mousse.
