🍰 Strawberry Mousse with Starfruit

Ingredients
- 250 g strawberries
- 1 packet vanilla sugar
- 2 tbsp lemon juice
- 1 tbsp powdered sugar
- 300 g whipping cream
- 2 tbsp yogurt
- 5 sheets gelatin
- 1 starfruit
- 4 tsp chopped pistachios
Instructions
- 1. Wash the strawberries thoroughly.
- 2. Remove the green calyx leaves and stems.
- 3. Let the berries drain well in a sieve.
- 4. Soak the gelatin sheet in a bowl of cold water.
- 5. Puree the drained strawberries with the lemon juice.
- 6. Add the vanilla sugar and the powdered sugar.
- 7. Press the strawberry mixture through a fine sieve.
- 8. This removes all hard seeds.
- 9. Stir the smooth strawberry puree with the yogurt.
- 10. Squeeze the soaked gelatin well.
- 11. Melt the gelatin in a small saucepan.
- 12. Make sure the mixture does not boil.
- 13. Stir the dissolved gelatin into the strawberry-yogurt mixture.
- 14. Place the bowl in the refrigerator for a short time.
- 15. Wait until the mixture starts to set at the edges.
- 16. Whip the cream until stiff.
- 17. Gently fold the whipped cream into the strawberry mixture.
- 18. Fill the mousse into a suitable bowl.
- 19. Let the mousse set completely in the refrigerator.
- 20. Wash the starfruits (carambolas) thoroughly.
- 21. Dry the fruits with a cloth.
- 22. Slice the starfruits into thin slices.
- 23. Distribute the pistachios onto four dessert plates.
- 24. Take a spoon and dip it in warm water.
- 25. Scoop balls out of the mousse with the wet spoon.
- 26. Place the mousse balls on the pistachios.
- 27. Garnish each plate with the starfruit slices.
- 28. Serve the dessert immediately.
