🍰 Fruity Strawberry Quark Cream

Ingredients
- 300 g strawberries
- 3 tbsp honey
- 2 egg whites
- 200 g quark
- 100 g crème fraîche
- 1 tsp lemon zest
- lemon balm (for garnishing)
Instructions
- 1. Wash the strawberries thoroughly.
- 2. Remove the green stems and leaves.
- 3. Gently dry the berries with a kitchen towel.
- 4. Set aside four whole strawberries for decoration.
- 5. Chop the remaining strawberries into small pieces.
- 6. Puree the chopped strawberries together with the honey until smooth.
- 7. Separate the egg whites from the yolks.
- 8. Whip the egg whites with a mixer until stiff peaks form.
- 9. Mix the quark in a separate bowl.
- 10. Add the strawberry-honey puree to the quark.
- 11. Stir the crème fraîche into the quark mixture.
- 12. Add the grated lemon zest and mix everything well.
- 13. Gently fold the whipped egg whites into the quark mixture.
- 14. Divide the finished cream among small bowls.
- 15. Place the bowls in the refrigerator for about one hour.
- 16. Cut the four reserved strawberries for decoration.
- 17. Stick the halved strawberries onto the rim of the cold bowls.
- 18. Garnish the cream with fresh leaves of lemon balm.
