  1. 1. Wash the strawberries thoroughly.
  2. 2. Remove the green stems and leaves.
  3. 3. Gently dry the berries with a kitchen towel.
  4. 4. Set aside four whole strawberries for decoration.
  5. 5. Chop the remaining strawberries into small pieces.
  6. 6. Puree the chopped strawberries together with the honey until smooth.
  7. 7. Separate the egg whites from the yolks.
  8. 8. Whip the egg whites with a mixer until stiff peaks form.
  9. 9. Mix the quark in a separate bowl.
  10. 10. Add the strawberry-honey puree to the quark.
  11. 11. Stir the crème fraîche into the quark mixture.
  12. 12. Add the grated lemon zest and mix everything well.
  13. 13. Gently fold the whipped egg whites into the quark mixture.
  14. 14. Divide the finished cream among small bowls.
  15. 15. Place the bowls in the refrigerator for about one hour.
  16. 16. Cut the four reserved strawberries for decoration.
  17. 17. Stick the halved strawberries onto the rim of the cold bowls.
  18. 18. Garnish the cream with fresh leaves of lemon balm.
