  1. 1. Rinse the strawberries carefully and remove the green stems.
  2. 2. Place 400 grams of the prepared strawberries into a tall container.
  3. 3. Puree the strawberries using a hand blender until smooth.
  4. 4. Take about one quarter of the puree and place it in a separate bowl.
  5. 5. Slice the remaining strawberries into thin pieces.
  6. 6. Mix the strawberry slices into the puree in the bowl.
  7. 7. Place the bowl in the refrigerator for a while to let the fruits marinate.
  8. 8. Split the vanilla pod lengthwise.
  9. 9. Scrape out the vanilla seeds with a knife.
  10. 10. Add the milk and the vanilla seeds to a saucepan.
  11. 11. Bring the milk with the vanilla seeds to a boil.
  12. 12. Remove the saucepan from the heat and let the milk cool down.
  13. 13. Separate the eggs so that you have egg whites and egg yolks separately.
  14. 14. Place two egg whites into a tall container.
  15. 15. Add all the egg yolks and half of the powdered sugar to a mixing bowl.
  16. 16. Beat the egg yolk-sugar mixture with a hand mixer.
  17. 17. Continue beating until the cream becomes thick and white.
  18. 18. Stir the warm milk into the egg yolk cream gradually.
  19. 19. Place the bowl with the cream over a bowl of cold water.
  20. 20. Continue beating the cream until it has cooled completely.
  21. 21. Add a pinch of salt and the remaining powdered sugar to the egg whites.
  22. 22. Beat the egg whites into stiff peaks.
  23. 23. Fold the strawberry puree into the cooled egg yolk cream.
  24. 24. Gently fold the egg whites into the strawberry cream.
  25. 25. Line a loaf pan with cling film.
  26. 26. Pour the strawberry cream into the prepared pan.
  27. 27. Place the pan in the freezer compartment for at least five hours.
  28. 28. Take the pan out of the freezer about ten minutes before serving.
  29. 29. Let the parfait thaw slightly in the refrigerator.
  30. 30. Turn the parfait out of the pan onto a serving plate.
  31. 31. Decorate the parfait with the marinated strawberry slices.
  32. 32. Serve the parfait immediately.
