🍰 Sugar-free Strawberry Parfait

Ingredients
- 500 g strawberries
- 1 vanilla pod
- 125 ml milk (3.5% fat)
- 2 eggs
- 2 egg yolks
- 3 tbsp powdered sugar from erythritol (60 g)

Instructions
- 1. Rinse the strawberries carefully and remove the green stems.
- 2. Place 400 grams of the prepared strawberries into a tall container.
- 3. Puree the strawberries using a hand blender until smooth.
- 4. Take about one quarter of the puree and place it in a separate bowl.
- 5. Slice the remaining strawberries into thin pieces.
- 6. Mix the strawberry slices into the puree in the bowl.
- 7. Place the bowl in the refrigerator for a while to let the fruits marinate.
- 8. Split the vanilla pod lengthwise.
- 9. Scrape out the vanilla seeds with a knife.
- 10. Add the milk and the vanilla seeds to a saucepan.
- 11. Bring the milk with the vanilla seeds to a boil.
- 12. Remove the saucepan from the heat and let the milk cool down.
- 13. Separate the eggs so that you have egg whites and egg yolks separately.
- 14. Place two egg whites into a tall container.
- 15. Add all the egg yolks and half of the powdered sugar to a mixing bowl.
- 16. Beat the egg yolk-sugar mixture with a hand mixer.
- 17. Continue beating until the cream becomes thick and white.
- 18. Stir the warm milk into the egg yolk cream gradually.
- 19. Place the bowl with the cream over a bowl of cold water.
- 20. Continue beating the cream until it has cooled completely.
- 21. Add a pinch of salt and the remaining powdered sugar to the egg whites.
- 22. Beat the egg whites into stiff peaks.
- 23. Fold the strawberry puree into the cooled egg yolk cream.
- 24. Gently fold the egg whites into the strawberry cream.
- 25. Line a loaf pan with cling film.
- 26. Pour the strawberry cream into the prepared pan.
- 27. Place the pan in the freezer compartment for at least five hours.
- 28. Take the pan out of the freezer about ten minutes before serving.
- 29. Let the parfait thaw slightly in the refrigerator.
- 30. Turn the parfait out of the pan onto a serving plate.
- 31. Decorate the parfait with the marinated strawberry slices.
- 32. Serve the parfait immediately.
