  1. 1. Remove the green stems from the strawberries and wash the fruit thoroughly.
  2. 2. Set aside a few nice berries for decoration.
  3. 3. Puree the rest of the strawberries finely together with 50 grams of powdered sugar and the juice of one lemon.
  4. 4. Press the puree through a fine sieve to make it completely smooth.
  5. 5. Mix the mascarpone cheese with the remaining powdered sugar, the yogurt, and the vanilla until smooth.
  6. 6. Whip the cream until stiff.
  7. 7. Gently fold the whipped cream into the mascarpone mixture.
  8. 8. Stir two-thirds of the strawberry puree into the mascarpone cream.
  9. 9. Keep the rest of the puree cool.
  10. 10. Stir the mixture only briefly and sparingly to create a marbled effect with white streaks.
  11. 11. Line a terrine mold with plastic wrap.
  12. 12. Make sure the wrap overhangs the sides by 5 to 7 centimeters.
  13. 13. Fill the parfait mixture into the prepared mold.
  14. 14. Fold the overhanging wrap over the surface of the mixture.
  15. 15. Place the strawberry parfait in the freezer for at least 5 hours, preferably overnight.
  16. 16. Just before serving, dip the terrine mold into hot water for a few seconds.
  17. 17. Turn the parfait out onto a serving plate or cutting board.
  18. 18. Remove the plastic wrap.
  19. 19. Serve the parfait whole or in slices on plates.
  20. 20. Garnish with the remaining strawberry sauce and fresh strawberries.
