🍽️ Strawberry Parfait Without Eggs

Ingredients
- 500 g strawberries
- 110 g powdered sugar from raw cane sugar
- 1 tbsp lemon juice
- 250 g mascarpone
- 150 g Greek yogurt
- 0.25 tsp vanilla powder
- 300 g whipping cream
Instructions
- 1. Remove the green stems from the strawberries and wash the fruit thoroughly.
- 2. Set aside a few nice berries for decoration.
- 3. Puree the rest of the strawberries finely together with 50 grams of powdered sugar and the juice of one lemon.
- 4. Press the puree through a fine sieve to make it completely smooth.
- 5. Mix the mascarpone cheese with the remaining powdered sugar, the yogurt, and the vanilla until smooth.
- 6. Whip the cream until stiff.
- 7. Gently fold the whipped cream into the mascarpone mixture.
- 8. Stir two-thirds of the strawberry puree into the mascarpone cream.
- 9. Keep the rest of the puree cool.
- 10. Stir the mixture only briefly and sparingly to create a marbled effect with white streaks.
- 11. Line a terrine mold with plastic wrap.
- 12. Make sure the wrap overhangs the sides by 5 to 7 centimeters.
- 13. Fill the parfait mixture into the prepared mold.
- 14. Fold the overhanging wrap over the surface of the mixture.
- 15. Place the strawberry parfait in the freezer for at least 5 hours, preferably overnight.
- 16. Just before serving, dip the terrine mold into hot water for a few seconds.
- 17. Turn the parfait out onto a serving plate or cutting board.
- 18. Remove the plastic wrap.
- 19. Serve the parfait whole or in slices on plates.
- 20. Garnish with the remaining strawberry sauce and fresh strawberries.
