🍰 Fruity Strawberry Mousse with Agar-Agar

Ingredients
- 500 g fresh strawberries
- 3 tbsp raw cane sugar
- 0.25 tsp vanilla powder
- 250 g whipping cream
- 200 g sour cream
- 1 tbsp lemon juice
- 1 level tsp agar-agar
Instructions
- 1. Remove the green stems from the strawberries.
- 2. Wash the berries thoroughly.
- 3. Cut the strawberries into four equal quarters.
- 4. Set aside 50 grams of the berry pieces for later decoration.
- 5. Puree the remaining strawberries together with the sugar into a smooth mixture.
- 6. Press the strawberry mixture through a fine sieve to make it completely smooth.
- 7. Whip the cream until it forms stiff peaks.
- 8. Mix the stiff cream with 350 grams of the strained strawberry puree.
- 9. Stir the sour cream into the cream-strawberry mixture.
- 10. Add the lemon juice and mix everything well.
- 11. Place the remaining part of the pure strawberry puree in the refrigerator to chill.
- 12. Dissolve the agar-agar (a plant-based gelling agent) in 50 milliliters of water.
- 13. Boil the agar-agar water mixture for two minutes while stirring constantly.
- 14. Take three tablespoons of the prepared strawberry-cream mixture.
- 15. Stir these three tablespoons into the hot agar-agar mixture.
- 16. Then, thoroughly mix the agar-agar mixture with the remaining large part of the strawberry-cream mass.
- 17. Pour the finished strawberry mousse into a shallow dish.
- 18. Place the dish in the refrigerator for at least four hours to allow the mousse to set.
- 19. To serve, scoop out portions (spoon-shaped servings) from the set mousse.
- 20. Place the mousse portions on the plate and decorate them with the reserved fresh strawberries.
- 21. Finally, drizzle the dish with the previously chilled strawberry puree.
