🍰 Fruity Strawberry Buttermilk Cream

Ingredients
- 500 g strawberries
- 0.5 vanilla pod
- 2 tbsp honey
- 0.5 small lemon
- 350 g sour milk (well chilled)
- 150 g cream yogurt (10 % fat; well chilled)
- 2 tbsp apple syrup
Instructions
- 1. Gently rinse the strawberries in a bowl of clear water.
- 2. Place the berries on kitchen paper and pat them completely dry with a cloth.
- 3. Set aside a few pretty, whole berries for decoration.
- 4. Cut the remaining strawberries into small pieces.
- 5. Put the cut berries into a tall container.
- 6. Puree the berries finely with a blender.
- 7. Press the puree through a fine sieve to remove seeds and fibers.
- 8. Slice the vanilla pod lengthwise.
- 9. Scrape out the vanilla seeds with a knife.
- 10. Stir the vanilla seeds and honey into the strawberry puree.
- 11. Squeeze the lemon to extract the juice.
- 12. Add the lemon juice, buttermilk, yogurt, and apple syrup into a large mixing bowl.
- 13. Whisk the mixture vigorously with a whisk until it is creamy.
- 14. Gently fold the prepared strawberry puree into the milk mixture.
- 15. Cover the bowl and place it in the refrigerator for at least one hour.
- 16. Cut the strawberries reserved for decoration into halves or thin slices.
- 17. Spoon the cold strawberry buttermilk cream into deep plates or small bowls.
- 18. Decorate the cream with the fresh strawberry pieces.
- 19. Serve the dessert immediately.
