🍰 Fruity Strawberry Porridge

Ingredients
- 500 g fresh strawberries
- 2 tbsp lemon juice
- 150 ml cherry juice
- 2 tbsp raw cane sugar
- 0.5 tbsp cornstarch
- 150 g whipping cream
- 1 tbsp vanilla sugar
- fresh mint
Instructions
- 1. Remove the green stems from the strawberries.
- 2. Wash the berries under running water.
- 3. Pat the strawberries dry with a kitchen towel.
- 4. Cut the berries into coarse cubes.
- 5. Take half of the strawberry cubes and put them into a pot.
- 6. Blend the berries in the pot briefly with a hand blender.
- 7. Stir the lemon juice into the pureed mixture.
- 8. Stir in the cherry juice.
- 9. Add the sugar.
- 10. Bring the mixture to a boil on the stove.
- 11. Take two tablespoons of cold water into a small bowl.
- 12. Mix the cornstarch (a starch for thickening foods) smoothly with the cold water.
- 13. Add the starch-water mixture immediately to the boiling strawberry porridge in the pot.
- 14. Bring the mixture to a boil again briefly while stirring constantly.
- 15. Keep stirring until the porridge thickens.
- 16. Gently fold in the remaining fresh strawberry cubes.
- 17. Remove the pot from the heat.
- 18. Place the porridge in a cool place for three hours.
- 19. Whip the cream with the vanilla sugar until stiff just before serving.
- 20. Distribute the cooled strawberry porridge onto plates.
- 21. Add a dollop of whipped cream to each plate.
