🍰 Creamy strawberry ice cream without cream

Ingredients
- 2 vanilla pods
- 750 ml milk (3.5% fat)
- 5 egg yolks
- 125 g sugar
- 0.5 organic lemon (zest)
- 500 g fresh strawberries
- 4 tbsp powdered sugar
Instructions
- 1. Split the vanilla pod lengthwise.
- 2. Scrape out the small seeds with a knife.
- 3. Add the vanilla seeds and the empty pods to the milk.
- 4. Bring the milk-vanilla mixture to a boil once.
- 5. Remove the pot from the heat.
- 6. Let the milk with the vanilla steep for about 30 minutes.
- 7. Whisk the egg yolks and sugar with a hand mixer.
- 8. Mix the mixture until it is frothy.
- 9. Remove the vanilla pods from the milk.
- 10. Warm up the milk briefly if necessary so that it is lukewarm.
- 11. Stir the lukewarm milk into the egg yolk cream while stirring constantly.
- 12. Place the mixture back on the stove.
- 13. Heat it until it is just about to boil.
- 14. Do not let the mixture boil.
- 15. Rinse the lemon under hot water.
- 16. Pat the lemon dry.
- 17. Grate the zest finely.
- 18. Stir the lemon zest into the ice cream mixture.
- 19. Let the mixture cool down while stirring occasionally.
- 20. Place the bowl in the freezer.
- 21. Let the mixture freeze for about 3 hours.
- 22. Stir the mixture well every 30 minutes during this time.
- 23. In the meantime, wash the strawberries.
- 24. Remove the stems from the berries.
- 25. Pat the strawberries dry.
- 26. Puree the berries together with the powdered sugar.
- 27. Place the strawberry mixture in a shallow dish.
- 28. Let the dish freeze for 3 hours.
- 29. Stir the strawberry mixture through every 30 minutes during this time.
- 30. Check if the vanilla ice cream and the strawberry puree are frozen.
- 31. They should still be soft enough to spread.
- 32. Let the masses thaw briefly if necessary before mixing them.
- 33. Mix both masses.
- 34. Combine them so that a marbled pattern is created.
- 35. Fill the finished strawberry ice cream into a third bowl.
- 36. Place the bowl in the freezer for another hour.
- 37. Let the ice cream thaw briefly before serving.
- 38. Use an ice cream scoop to cut out balls of ice cream.
- 39. Serve the strawberry ice cream without cream immediately.
