🍰 Fresh Strawberry Yogurt Cream

Ingredients
- 200 g strawberries
- 1 tbsp lemon juice
- 50 g powdered sugar
- 200 g yogurt (3.5% fat)
- 200 g low-fat quark
- 100 g whipping cream
Instructions
- 1. Remove the green stems from the strawberries and wash them thoroughly.
- 2. Set aside four nice strawberries to use as decoration later.
- 3. Puree the remaining strawberries with a hand blender until smooth.
- 4. Press the strawberry puree through a fine sieve to remove any coarse pieces.
- 5. Stir in the lemon juice and powdered sugar into the sieved puree.
- 6. Mix the yogurt and low-fat quark in a bowl until you have a smooth mixture.
- 7. Gently fold the prepared strawberry puree into the yogurt-quark mixture.
- 8. Whip the cream with a mixer until it is firm and stiff.
- 9. Gently fold the stiffly whipped cream into the strawberry-yogurt mixture.
- 10. Distribute the cream evenly onto small bowls.
- 11. Decorate each portion with the four reserved strawberries.
- 12. Serve the cream immediately to keep it fresh and cold.
