  1. 1. Remove the green stems from the strawberries and wash them thoroughly.
  2. 2. Set aside four nice strawberries to use as decoration later.
  3. 3. Puree the remaining strawberries with a hand blender until smooth.
  4. 4. Press the strawberry puree through a fine sieve to remove any coarse pieces.
  5. 5. Stir in the lemon juice and powdered sugar into the sieved puree.
  6. 6. Mix the yogurt and low-fat quark in a bowl until you have a smooth mixture.
  7. 7. Gently fold the prepared strawberry puree into the yogurt-quark mixture.
  8. 8. Whip the cream with a mixer until it is firm and stiff.
  9. 9. Gently fold the stiffly whipped cream into the strawberry-yogurt mixture.
  10. 10. Distribute the cream evenly onto small bowls.
  11. 11. Decorate each portion with the four reserved strawberries.
  12. 12. Serve the cream immediately to keep it fresh and cold.
