  1. 1. Wash the strawberries, remove the green tops, and let them drain. Place the berries together with the lemon juice and jam sugar into the blender. Puree the mixture on the highest setting for about 10 minutes until it becomes thick.
  2. 2. Finely chop the lemon balm and stir it into the jam. Fill the jam into jars that have been rinsed with hot water and seal them tightly. The jam will keep in the refrigerator for about 4 weeks.
