🍰 Strawberry Watermelon Ice with Mint

Ingredients
- 600 g watermelon (approx. 1/4)
- 250 g strawberries
- 1 lime
- 3 sprigs mint
- 50 ml rice syrup
- 20 g crème fraîche (1 tbsp)
Instructions
- 1. Peel the watermelon and cut it into large chunks.
- 2. Set aside 100 grams of the melon pieces.
- 3. Remove the seeds from the remaining melon pieces.
- 4. Hull 150 grams of strawberries and wash them.
- 5. Cut the strawberries into small pieces.
- 6. Halve a lime.
- 7. Squeeze the juice from the lime.
- 8. Wash the mint and shake it dry.
- 9. Pluck the mint leaves from the stems.
- 10. Place the melon, strawberries, lime juice, rice syrup, and mint into a blender.
- 11. Blend the ingredients until smooth.
- 12. Stir the crème fraîche into the puree mixture.
- 13. Fill the mixture into six ice pop molds.
- 14. Place the molds in the freezer for about one hour.
- 15. Insert wooden sticks into the half-frozen ice portions.
- 16. Let the ice portions freeze completely for another three hours.
- 17. Loosen the ice portions from the molds to serve them.
- 18. Hull the remaining strawberries and wash them.
- 19. Cut the remaining strawberries into quarters.
- 20. Plate the ice pops.
- 21. Garnish the ice pops with the strawberry quarters and the reserved melon pieces.
