  1. 1. Remove the green stems from the strawberries and wash them thoroughly.
  2. 2. Cut the berries in half or quarters depending on their size.
  3. 3. Place the prepared strawberries and the pectin sugar into a pot.
  4. 4. Stir the mixture well to ensure the sugar is evenly distributed.
  5. 5. Let the mixture stand for about one hour to allow the fruit to release its juice.
  6. 6. Fill a large pot with water and bring it to a boil.
  7. 7. Place the empty screw-top jars in the boiling water for ten minutes to sterilize them.
  8. 8. Carefully remove the hot jars from the water.
  9. 9. Place the jars upside down on clean kitchen towels to let them cool.
  10. 10. Slice the vanilla pods lengthwise.
  11. 11. Scrape out the inner vanilla seeds with a knife.
  12. 12. Add the orange juice, the vanilla seeds, and the empty vanilla pods to the strawberry mixture.
  13. 13. Bring the mixture to a boil while stirring constantly.
  14. 14. Let the jam bubble and cook for three to four minutes.
  15. 15. Remove the rising foam with a spoon.
  16. 16. Remove the vanilla pods from the pot and discard them.
  17. 17. Use a ladle or a measuring cup to fill the hot jam into the prepared jars.
  18. 18. Wipe the rims of the jars clean to ensure the lid seals tightly.
  19. 19. Screw the lids tightly onto the jars immediately.
  20. 20. Place the filled jars upside down for a few minutes.
  21. 21. Turn the jars back over after about five minutes.
