🍰 Fruity Strawberry Tiramisu

Ingredients
- 400 g strawberries
- 4 tbsp multivitamin juice
- 0.5 lemon
- 50 g mascarpone
- 250 g quark
- 200 g yogurt (1,5 % fat)
- 1 packet cream stabilizer
- 0.5 tsp vanilla powder
- 2 tsp raw cane sugar
- 130 g ladyfingers
Instructions
- 1. Gently wash the strawberries in a bowl of cold water.
- 2. Remove the berries and let them drain well on kitchen paper.
- 3. Remove the green stems and leaves from the strawberries.
- 4. Place about 150 grams of the strawberries and multivitamin juice into a tall container.
- 5. Puree the mixture finely using a hand blender.
- 6. Squeeze the juice from half a lemon.
- 7. Stir the lemon juice into the strawberry puree.
- 8. Season the mixture to taste with the juice.
- 9. Place mascarpone, quark, and yogurt into a large bowl.
- 10. Mix cream stabilizer, vanilla powder, and sugar in a small bowl.
- 11. Sift the dry mixture over the mascarpone cream.
- 12. Stir everything until smooth using the beaters of a hand mixer.
- 13. Line a loaf pan (approx. 25x11 cm) with cling film.
- 14. Place half of the ladyfingers into the pan.
- 15. Ensure the sugar side of the biscuits is facing downwards.
- 16. Drizzle half of the strawberry puree over the biscuits.
- 17. Spread half of the mascarpone-quark cream on top.
- 18. Smooth the cream with an offset spatula.
- 19. Slice the remaining strawberries.
- 20. Spread about two-thirds of the strawberry slices over the cream.
- 21. Store the remaining strawberry slices covered and in the fridge.
- 22. Place the remaining ladyfingers on the cream.
- 23. Again, ensure the sugar side is facing downwards.
- 24. Set aside two tablespoons of the puree in the fridge.
- 25. Drizzle the remaining puree over the biscuits.
- 26. Spread the remaining mascarpone-quark cream on top.
- 27. Cover the pan with cling film.
- 28. Chill the tiramisu for at least 3 hours.
- 29. Turn the tiramisu out onto a plate.
- 30. Remove the cling film.
- 31. Cut the tiramisu into 4 portions.
- 32. Distribute the portions onto plates.
- 33. Garnish the tiramisu with the reserved puree.
- 34. Additionally garnish with the remaining strawberry slices.
- 35. Serve the finished strawberry tiramisu.
