🍰 Strawberry Tiramisu with Amarettini

Ingredients
- 2 sheets white gelatin
- 300 g strawberries
- 200 g mascarpone
- 50 g double cream
- 40 g powdered sugar
- 1 lemon (zest)
- 40 ml orange liqueur
- 100 g cold whipping cream
- 2 egg whites
- 30 g sugar
- 80 g amarettini
- mint leaves (for garnish)
Instructions
- 1. Soak the gelatin in a bowl of cold water.
- 2. Remove the stems from the strawberries and wash them thoroughly.
- 3. Gently pat the strawberries dry with kitchen paper.
- 4. Cut the strawberries into small pieces.
- 5. Mix the mascarpone, crème double, powdered sugar, and lemon zest in a large bowl.
- 6. Warm the orange liqueur in a small saucepan.
- 7. Squeeze the soaked gelatin sheet well to remove excess water.
- 8. Dissolve the squeezed gelatin in the warm orange liqueur.
- 9. Stir the gelatin mixture into the mascarpone cream.
- 10. Whip the cream with a mixer until it is firm.
- 11. Whip the egg whites together with the sugar until stiff.
- 12. Gently fold the whipped cream into the mascarpone mixture.
- 13. Gently fold the stiffly beaten egg whites into the mascarpone cream.
- 14. Halve the amarettini cookies.
- 15. Distribute the halved amarettini cookies at the bottom of the glasses.
- 16. Layer the strawberries and mascarpone cream alternately over the cookies.
- 17. Place the glasses in the refrigerator for one hour to chill.
- 18. Decorate the finished tiramisu with fresh mint leaves before serving.
