  1. 1. Pile the flour and nuts onto a clean work surface.
  2. 2. Mix the dry ingredients with a pinch of salt.
  3. 3. Make a well in the center of the flour mixture.
  4. 4. Cut 95 grams of butter into small cubes.
  5. 5. Distribute the butter cubes around the edge of the well.
  6. 6. Add one egg, three tablespoons of cold water, and honey into the center.
  7. 7. Chop the ingredients roughly with a knife until small crumbs form.
  8. 8. Knead the crumbs quickly by hand into a smooth dough.
  9. 9. Shape the dough into a ball.
  10. 10. Wrap the dough ball in cling film.
  11. 11. Chill the dough in the refrigerator for about 30 minutes.
  12. 12. Grease eight tartlet molds (each 10 cm in diameter) with the remaining butter.
  13. 13. Divide the dough into eight equal portions.
  14. 14. Work with a little flour on the surface.
  15. 15. Roll out each portion thinly.
  16. 16. Place the dough circles into the prepared molds.
  17. 17. Prick the bottom of the tartlets several times with a fork.
  18. 18. Preheat the oven to 200 degrees (convection 180 degrees or gas mark 3).
  19. 19. Bake the tartlets in the oven for about 20 minutes.
  20. 20. Remove the tartlets from the oven.
  21. 21. Let them cool down briefly.
  22. 22. Carefully release the tartlets from the molds.
  23. 23. Let the tartlets cool completely.
  24. 24. Mix yogurt with vanilla sugar in a bowl.
  25. 25. Wash the strawberries thoroughly.
  26. 26. Remove the stems and leaves from the strawberries.
  27. 27. Pat the strawberries dry with a cloth.
  28. 28. Spread the yogurt cream over the cooled tartlets.
  29. 29. Place the prepared strawberries on top of the cream.
  30. 30. Warm the strawberry jelly in a small saucepan over low heat.
  31. 31. Drizzle the tartlets with the warm jelly.
