🍽️ Strawberry Tartlets with Yogurt Cream

Ingredients
- 125 g spelt whole wheat flour (and some flour for the work surface)
- 125 g chopped hazelnut kernels
- 1 pinch salt
- 105 g butter (cold)
- 1 egg
- 4 tbsp honey
- 250 g yogurt (1.5% fat)
- 20 g vanilla sugar (1 tbsp)
- 400 g strawberries
- 50 g strawberry jelly
Instructions
- 1. Pile the flour and nuts onto a clean work surface.
- 2. Mix the dry ingredients with a pinch of salt.
- 3. Make a well in the center of the flour mixture.
- 4. Cut 95 grams of butter into small cubes.
- 5. Distribute the butter cubes around the edge of the well.
- 6. Add one egg, three tablespoons of cold water, and honey into the center.
- 7. Chop the ingredients roughly with a knife until small crumbs form.
- 8. Knead the crumbs quickly by hand into a smooth dough.
- 9. Shape the dough into a ball.
- 10. Wrap the dough ball in cling film.
- 11. Chill the dough in the refrigerator for about 30 minutes.
- 12. Grease eight tartlet molds (each 10 cm in diameter) with the remaining butter.
- 13. Divide the dough into eight equal portions.
- 14. Work with a little flour on the surface.
- 15. Roll out each portion thinly.
- 16. Place the dough circles into the prepared molds.
- 17. Prick the bottom of the tartlets several times with a fork.
- 18. Preheat the oven to 200 degrees (convection 180 degrees or gas mark 3).
- 19. Bake the tartlets in the oven for about 20 minutes.
- 20. Remove the tartlets from the oven.
- 21. Let them cool down briefly.
- 22. Carefully release the tartlets from the molds.
- 23. Let the tartlets cool completely.
- 24. Mix yogurt with vanilla sugar in a bowl.
- 25. Wash the strawberries thoroughly.
- 26. Remove the stems and leaves from the strawberries.
- 27. Pat the strawberries dry with a cloth.
- 28. Spread the yogurt cream over the cooled tartlets.
- 29. Place the prepared strawberries on top of the cream.
- 30. Warm the strawberry jelly in a small saucepan over low heat.
- 31. Drizzle the tartlets with the warm jelly.
