  2. 2. Let the mixture reduce slightly.
  3. 3. Then let the mixture cool down.
  4. 4. Strain the liquid through a sieve to remove the peel.
  5. 5. Stir in the lemon juice and the sparkling wine into the cooled liquid.
  6. 6. Pour the mixture into a shallow dish.
  7. 7. Place the dish in the freezer.
  8. 8. Stir the mixture every 30 minutes with a fork.
  9. 9. This prevents the formation of large ice crystals.
  10. 10. Freeze the sorbet for a total of about 4 hours.
  11. 11. Wash the strawberries in the meantime and let them drain.
  12. 12. Slice the strawberries or halve them as you like.
  13. 13. Wash the mint and pat it dry.
