🍰 Strawberry Sekt Sorbet

Ingredients
- 400 ml strawberry juice
- 400 ml sekt
- 0.5 tsp grated lemon zest
- 2 tbsp lemon juice
- strawberries (for garnishing)
- mint (for garnishing)
- whipping cream (for serving)
Instructions
- 1. Warm up the strawberry juice together with half of the lemon peel.
- 2. Let the mixture reduce slightly.
- 3. Then let the mixture cool down.
- 4. Strain the liquid through a sieve to remove the peel.
- 5. Stir in the lemon juice and the sparkling wine into the cooled liquid.
- 6. Pour the mixture into a shallow dish.
- 7. Place the dish in the freezer.
- 8. Stir the mixture every 30 minutes with a fork.
- 9. This prevents the formation of large ice crystals.
- 10. Freeze the sorbet for a total of about 4 hours.
- 11. Wash the strawberries in the meantime and let them drain.
- 12. Slice the strawberries or halve them as you like.
- 13. Wash the mint and pat it dry.
- 14. Place the finished strawberry sekt sorbet into small bowls.
- 15. Garnish the sorbet with cream, the fresh strawberries, and the mint.
- 16. Then serve the dessert.
