🍽️ Sugar-Free Strawberry Rhubarb Jam

Ingredients
- 1 kg fresh strawberries
- 500 g rhubarb
- 3 tbsp lemon juice
- 0.5 tsp vanilla powder
- 1 cinnamon stick
- 500 g birch sugar (jam sugar 3:1)
Instructions
- 1. Fill a large pot with water and bring it to a boil.
- 2. Place the jars and lids in the boiling water for 10 minutes to sterilize them.
- 3. Carefully remove the jars from the water.
- 4. Place the jars upside down on clean kitchen towels to let them cool.
- 5. Wash the strawberries and remove the green stems.
- 6. Cut the strawberries into halves or quarters depending on their size.
- 7. Wash the rhubarb and cut it into small pieces.
- 8. Put the prepared strawberries, rhubarb, lemon juice, vanilla powder, cinnamon stick, and birch sugar into a pot.
- 9. Boil the mixture vigorously for 4 minutes while stirring constantly.
- 10. Fill the hot jam immediately into the prepared jars.
- 11. Seal the jars tightly with the lids.
- 12. Turn the jars upside down to let them cool.
- 13. Store the jam in a cool place while sealed.
- 14. Consume the jam within a few days after opening.
