  1. 1. Fill a large pot with water and bring it to a boil.
  2. 2. Place the jars and lids in the boiling water for 10 minutes to sterilize them.
  3. 3. Carefully remove the jars from the water.
  4. 4. Place the jars upside down on clean kitchen towels to let them cool.
  5. 5. Wash the strawberries and remove the green stems.
  6. 6. Cut the strawberries into halves or quarters depending on their size.
  7. 7. Wash the rhubarb and cut it into small pieces.
  8. 8. Put the prepared strawberries, rhubarb, lemon juice, vanilla powder, cinnamon stick, and birch sugar into a pot.
  9. 9. Boil the mixture vigorously for 4 minutes while stirring constantly.
  10. 10. Fill the hot jam immediately into the prepared jars.
  11. 11. Seal the jars tightly with the lids.
  12. 12. Turn the jars upside down to let them cool.
  13. 13. Store the jam in a cool place while sealed.
  14. 14. Consume the jam within a few days after opening.
