🍰 Fresh Strawberry and Melon Salad

Ingredients
- 500 g strawberries
- 1 melon (e.g. Charentais)
- 1 lime
- 1 small orange
- 2 tbsp maple syrup
- 3 sprigs lemon thyme
- 2 tbsp coconut blossom sugar
Instructions
- 1. Gently wash the strawberries in a bowl with water.
- 2. Place the berries on kitchen paper and let them drain.
- 3. Pat the strawberries dry with the paper.
- 4. Remove the green stems from the berries.
- 5. Cut the strawberries in half or quarters depending on their size.
- 6. Cut the melon in half lengthwise.
- 7. Remove the seeds from the melon with a spoon.
- 8. Peel the melon.
- 9. Cut the melon flesh into thin strips.
- 10. Rinse the lime under running water.
- 11. Dry the lime.
- 12. Grate the fine zest of the lime finely.
- 13. Put the lime zest into a bowl.
- 14. Cut the lime in half.
- 15. Cut the orange in half.
- 16. Squeeze the juice from the lime.
- 17. Squeeze the juice from the orange.
- 18. Add the juice of the lime and the orange to the lime zest.
- 19. Stir the mixture well with the maple syrup.
- 20. Gently fold the prepared strawberries into the sauce.
- 21. Gently fold the prepared melon strips into the sauce.
- 22. Rinse the lemon thyme under running water.
- 23. Shake the thyme dry.
- 24. Pluck a few nice leaves from the thyme and set them aside.
- 25. Finely chop the remaining thyme leaves.
- 26. Grind the chopped thyme leaves finely with the coconut blossom sugar.
- 27. Use a mortar or a food processor for this.
- 28. Fill the salad into small bowls.
- 29. Sprinkle the thyme sugar over the salad.
- 30. Garnish the salad with the reserved thyme leaves.
