  2. 2. Remove the green stems and cut the berries into small pieces.
  3. 3. Place the strawberry pieces into a large cooking pot.
  4. 4. Pour the orange juice over the fruit.
  5. 5. Peel the ginger.
  6. 6. Finely chop the ginger.
  7. 7. Add the chopped ginger to the pot with the strawberries.
  8. 8. Puree the entire mixture with a hand blender or potato masher until smooth.
  9. 9. Stir the sugar into the fruit mixture.
  10. 10. Place the pot on the stove and heat the mixture while stirring constantly.
  11. 11. Bring the jam to a boil.
  12. 12. Reduce the heat slightly and let the jam simmer openly and bubblingly for about 4 minutes.
  13. 13. Meanwhile, perform the setting test to check if the jam is setting properly.
  14. 14. Remove the pot from the heat.
  15. 15. Stir in the lemon zest.
  16. 16. Fill the hot jam immediately into the prepared, clean jars.
  17. 17. Seal the jars tightly with the lids.
  18. 18. Let the jam cool down completely in the jars.
