🍽️ Fresh Strawberry-Ginger Jam

Ingredients
- 1.2 kg ripe strawberries
- 1 untreated orange (juice and zest)
- 5 cm fresh ginger
- 1 kg jam sugar (1:1)
Instructions
- 1. Wash the strawberries thoroughly.
- 2. Remove the green stems and cut the berries into small pieces.
- 3. Place the strawberry pieces into a large cooking pot.
- 4. Pour the orange juice over the fruit.
- 5. Peel the ginger.
- 6. Finely chop the ginger.
- 7. Add the chopped ginger to the pot with the strawberries.
- 8. Puree the entire mixture with a hand blender or potato masher until smooth.
- 9. Stir the sugar into the fruit mixture.
- 10. Place the pot on the stove and heat the mixture while stirring constantly.
- 11. Bring the jam to a boil.
- 12. Reduce the heat slightly and let the jam simmer openly and bubblingly for about 4 minutes.
- 13. Meanwhile, perform the setting test to check if the jam is setting properly.
- 14. Remove the pot from the heat.
- 15. Stir in the lemon zest.
- 16. Fill the hot jam immediately into the prepared, clean jars.
- 17. Seal the jars tightly with the lids.
- 18. Let the jam cool down completely in the jars.
