🍰 Strawberry Cream Cheese Tart

Ingredients
- 150 g flour
- 100 g butter
- 50 g sugar
- 1 egg yolk
- 2 tbsp whipping cream
- 8 sheets white gelatin
- 250 g low-fat quark
- 600 g cream cheese
- 300 g whipping cream
- 70 g sugar
- 800 g strawberries
Instructions
- 1. Preheat the oven to 200 degrees Celsius.
- 2. Put flour, butter, sugar, egg yolk, and cream into a bowl.
- 3. Coarsely chop the ingredients with a knife or fork.
- 4. Quickly knead everything into a smooth dough.
- 5. Wrap the dough in cling film.
- 6. Chill the dough in the refrigerator for 1 hour.
- 7. Roll out the dough into a circle with a diameter of 26 centimeters.
- 8. Place the dough on a baking sheet lined with baking paper.
- 9. Bake the base in the oven for about 20 minutes.
- 10. Soak the gelatin in plenty of cold water.
- 11. Stir skimmed curd cheese and cream cheese until smooth.
- 12. Whip the cream until stiff.
- 13. Mix the curd cheese mixture with sugar.
- 14. Squeeze the soaked gelatin well.
- 15. Dissolve the gelatin in a small saucepan over low heat.
- 16. Stir some of the curd cheese mixture into the dissolved gelatin.
- 17. Quickly mix the gelatin mixture with the remaining curd cheese.
- 18. Gently fold in the whipped cream.
- 19. Wash the strawberries and remove the green tops.
- 20. Halve the strawberries.
- 21. Arrange some strawberries on the cooled pastry base.
- 22. Place a tart ring around the strawberries.
- 23. Pour the curd cream into the ring and smooth it out.
- 24. Chill the tart in the refrigerator for at least 3 hours.
- 25. Decorate the finished tart with the remaining strawberries.
