🍰 Strawberry Espresso Layer Cake

Ingredients
- 250 g strawberries
- 1 small lemon
- 2 tbsp apple syrup
- 1 small organic orange
- 250 g low-fat quark
- 0.5 tsp vanilla powder
- 100 g Cantuccini
- 3 tbsp espresso (cooled)
Instructions
- 1. Gently wash the strawberries in a bowl of water.
- 2. Thoroughly pat the berries dry with kitchen paper.
- 3. Remove the green stems from the strawberries.
- 4. Cut the berries in half or quarters depending on their size.
- 5. Halve the lemon and squeeze out the juice.
- 6. Place the prepared strawberries into a second bowl.
- 7. Stir the apple syrup and one teaspoon of lemon juice into the berries.
- 8. Cover the bowl and let the berries marinate for twenty minutes.
- 9. Wash the orange thoroughly and dry it.
- 10. Finely grate the outer zest of the orange.
- 11. Halve the orange and squeeze out the juice.
- 12. Place the quark (a type of fresh cheese) into a clean bowl.
- 13. Add the orange zest and vanilla powder to the quark.
- 14. Add one tablespoon of lemon juice to the quark.
- 15. Stir in enough orange juice until the quark is smooth and creamy.
- 16. Break the cantuccini (Italian almond biscuits) into medium-sized pieces.
- 17. Distribute the biscuit pieces evenly among four glasses.
- 18. Drizzle the biscuits evenly with the espresso.
- 19. Layer the orange quark and the marinated strawberries alternately.
- 20. Serve the dessert immediately.
