  1. 1. Peel the pineapple completely.
  2. 2. Cut the pineapple lengthwise into four equal quarters.
  3. 3. Remove the hard, central core from each pineapple piece.
  4. 4. Cut the soft pineapple flesh into small, bite-sized pieces.
  5. 5. Wash the strawberries thoroughly under running water.
  6. 6. Remove the green leaves and stems from the strawberries.
  7. 7. Cut the strawberries in half or quarters, depending on their size.
  8. 8. Take about 100 grams of the prepared strawberries.
  9. 9. Place these strawberries together with the honey and lemon juice into a blender.
  10. 10. Blend the mixture until it is very fine and smooth.
  11. 11. Optionally, press the pureed mixture through a fine sieve to make it completely smooth.
  12. 12. Divide the remaining whole strawberry and pineapple pieces among small plates.
  13. 13. Drizzle the prepared strawberry-honey sauce over the fruit.
  14. 14. Garnish the salad with fresh lemon balm leaves.
  15. 15. Serve the salad immediately.
