🍽️ Creamy Pea Soup with Fried Sausage

Ingredients
- 100 g green, dried peas
- 100 g yellow, dried peas
- 1 l meat broth
- 2 carrots
- 0.25 celeriac
- 2 potatoes
- 2 bay leaves
- 3 allspice berries
- 2 tbsp butter
- 2 tbsp flour
- salt
- pepper (from the mill)
- 1 tbsp dried marjoram
- 500 g meat sausage
- 1 tbsp vegetable oil
Instructions
- 1. Rinse the peas under cold running water.
- 2. Place the peas in the meat broth and let them soak overnight.
- 3. Peel the vegetables the next day.
- 4. Cut the vegetables into small cubes.
- 5. Bring the peas and the broth to a boil.
- 6. Add the spices and the chopped vegetables to the soup.
- 7. Simmer the soup over medium heat for 45 to 50 minutes.
- 8. Melt the butter in a separate pan.
- 9. Stir the flour into the melted butter.
- 10. Let the flour mixture brown slightly.
- 11. Take some of the hot soup and stir it into the flour mixture.
- 12. Pour the thinned flour mixture back into the rest of the soup pot.
- 13. Season the soup with salt, pepper, and marjoram.
- 14. Let the soup thicken briefly until creamy.
- 15. Slice the sausage diagonally.
- 16. Heat a grill pan with oil.
- 17. Fry the sausage slices in the hot pan on both sides.
- 18. Fill the finished soup into bowls.
- 19. Place three slices of sausage on each bowl of soup.
- 20. Garnish the soup with freshly chopped parsley.
- 21. Serve the soup hot.
