🍽️ Creamy Pea Soup from Frozen

Ingredients
- 1 large floury potatoes
- 1 shallot
- 1 clove garlic
- 1 tbsp butter
- 1 tbsp olive oil
- 650 ml vegetable broth
- 350 g frozen peas
- 200 g whipping cream
- 4 sprigs mint
- salt
- pepper (from the mill)
- 1 dash lime juice
- 1 tsp dried chili peppers
Instructions
- 1. Peel the potato and wash it thoroughly.
- 2. Cut the potato into small cubes.
- 3. Peel the shallot and the garlic clove.
- 4. Dice the shallot and garlic very finely.
- 5. Heat the butter and oil in a large pot.
- 6. Add the shallot, garlic, and potato cubes to the pot.
- 7. Sauté the vegetables briefly until they soften.
- 8. Deglaze the mixture with the vegetable broth.
- 9. Bring the soup to a boil.
- 10. Let the soup simmer gently for about 5 minutes.
- 11. Add the frozen peas to the pot.
- 12. Cook the peas for another 10 minutes until they are soft.
- 13. Stir the cream into the soup.
- 14. Finely chop the mint.
- 15. Add the chopped mint to the soup.
- 16. Blend the soup smooth with a hand blender.
- 17. Add more broth if necessary to reach your desired consistency.
- 18. Season the soup with salt and pepper to taste.
- 19. Add a splash of lime juice.
- 20. Heat the soup again briefly until it is hot.
- 21. Pour the soup into bowls.
- 22. Sprinkle chili flakes over the finished soup.
- 23. Serve the pea soup immediately.
