  1. 1. Bring a small amount of salted water to a boil.
  2. 2. Cook the peas for about 5 minutes.
  3. 3. Immediately shock the peas in ice water.
  4. 4. Let the peas drain.
  5. 5. Peel the onion.
  6. 6. Dice the onion into small cubes.
  7. 7. Wash the mint.
  8. 8. Shake the mint dry.
  9. 9. Chop the mint leaves.
  10. 10. Set aside some leaves for garnish.
  11. 11. Heat the butter in a pot.
  12. 12. Sauté the onion cubes in it.
  13. 13. Pour in the cream.
  14. 14. Season the mixture with salt and pepper.
  15. 15. Top up the soup with broth.
  16. 16. Bring the soup to a boil once.
  17. 17. Put the pot contents into a blender.
  18. 18. Add the peas to the blender.
  19. 19. Add the chopped mint to the blender.
  20. 20. Blend everything until smooth.
  21. 21. Wash the langostinos.
  22. 22. Peel the langostinos.
  23. 23. Heat the olive oil in a pan.
  24. 24. Fry the langostinos for about 1 minute.
  25. 25. Season the langostinos with salt and pepper.
  26. 26. Let the langostinos drain on kitchen paper.
  27. 27. Heat the soup again briefly.
  28. 28. Do not let the soup boil anymore.
  29. 29. Fill the soup into bowls.
  30. 30. Distribute the langostinos in the soup.
  31. 31. Garnish the soup with the remaining mint.
