🍽️ Creamy Pea Soup with Mint and Langostinos

Ingredients
- 600 g fresh peas (or frozen)
- 1 onion
- 100 ml whipping cream
- 30 g butter
- 500 ml vegetable broth
- 1 handful mint
- 8 langoustines
- 2 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Bring a small amount of salted water to a boil.
- 2. Cook the peas for about 5 minutes.
- 3. Immediately shock the peas in ice water.
- 4. Let the peas drain.
- 5. Peel the onion.
- 6. Dice the onion into small cubes.
- 7. Wash the mint.
- 8. Shake the mint dry.
- 9. Chop the mint leaves.
- 10. Set aside some leaves for garnish.
- 11. Heat the butter in a pot.
- 12. Sauté the onion cubes in it.
- 13. Pour in the cream.
- 14. Season the mixture with salt and pepper.
- 15. Top up the soup with broth.
- 16. Bring the soup to a boil once.
- 17. Put the pot contents into a blender.
- 18. Add the peas to the blender.
- 19. Add the chopped mint to the blender.
- 20. Blend everything until smooth.
- 21. Wash the langostinos.
- 22. Peel the langostinos.
- 23. Heat the olive oil in a pan.
- 24. Fry the langostinos for about 1 minute.
- 25. Season the langostinos with salt and pepper.
- 26. Let the langostinos drain on kitchen paper.
- 27. Heat the soup again briefly.
- 28. Do not let the soup boil anymore.
- 29. Fill the soup into bowls.
- 30. Distribute the langostinos in the soup.
- 31. Garnish the soup with the remaining mint.
