🍽️ Pea Soup with Salmon

Ingredients
- 1 kg fresh peas
- 1 onion
- 1 bunch lemon balm
- 2 tbsp margarine (or butter)
- 750 ml instant vegetable broth
- 1 cup double cream
- salt
- pepper
- 50 g smoked salmon
Instructions
- 1. Shell the peas from their pods. Peel the onion and dice it into small cubes. Pluck the lemon balm leaves from the stems.
- 2. Heat the butter in a pot. Sauté the peas, onion cubes, and lemon balm stems briefly. Add the broth and let the soup simmer on low heat for about 15 minutes.
- 3. Remove one ladleful of peas from the pot and set them aside. Puree the remaining soup contents until smooth using a hand blender.
- 4. Stir in the crème double (a high-fat cream). Add the reserved peas and lemon balm leaves, and mix everything well. Season with salt and pepper to taste. Cut the salmon into strips, place them on the soup, and serve the dish immediately.
