  1. 1. Rinse the peas under cold running water and let them drain well in a colander.
  2. 2. Wash the mint leaves and gently shake off the excess water.
  3. 3. Wash the leek, trim off the tough green tops, and slice the white part into thin rings.
  4. 4. Peel the celery, onion, and garlic, then dice them into very fine pieces.
  5. 5. Heat some butter in a pot and sauté the leek, diced vegetables, and peas until they are soft.
  6. 6. Pour in the vegetable broth and let the soup simmer gently for about 20 minutes.
  7. 7. Stir in the cream and the fresh mint into the cooked soup.
  8. 8. Blend the soup with an immersion blender until it is smooth and creamy.
  9. 9. Strain the soup through a fine mesh sieve to remove any remaining fibers.
  10. 10. Simmer the soup a bit longer to thicken it if needed, or add a splash more broth if it is too thick.
  11. 11. Season the soup to taste with salt, pepper, and a pinch of nutmeg.
  12. 12. Serve the hot soup in a cup.
