🍽️ Matjes Pea Salad

Ingredients
- 8 Matjes fillets
- 300 g frozen peas
- 2 red bell peppers
- 3 tbsp chopped parsley
- salt
- pepper from the mill
- sunflower oil
- white balsamic vinegar
- 4 slices mozzarella
Instructions
- 1. Bring water to a boil and add some salt.
- 2. Add the peas to the boiling water and cook them for 6 minutes.
- 3. Drain the peas and let them drip dry.
- 4. Wash the bell peppers thoroughly.
- 5. Cut the bell peppers in half and remove the seeds.
- 6. Cut the pepper flesh into small cubes.
- 7. Let the matjes fillets drip dry.
- 8. Pat the fillets dry with a kitchen towel.
- 9. Cut the matjes fillets into bite-sized pieces.
- 10. Place the drained peas, the pepper cubes, the parsley, and the matjes pieces into a bowl.
- 11. Add 3 tablespoons of oil, 2 tablespoons of vinegar, salt, and plenty of pepper.
- 12. Mix all ingredients well together.
- 13. Let the salad marinate for 30 minutes.
- 14. Slice the mozzarella balls into slices.
- 15. Plate the salad and place the mozzarella slices on top.
- 16. Serve the salad cold.
