🍽️ Creamy Pea Puree with Herbs

Ingredients
- 750 g frozen peas
- 250 g floury potatoes
- 400 ml vegetable broth
- 1 sprig mint
- 1 sprig basil
- 1 tbsp tahini
- 4 tbsp olive oil
- salt
Instructions
- 1. Rinse the basil and mint under running water.
- 2. Shake the herbs dry.
- 3. Carefully pluck the leaves from the stems.
- 4. Let the peas thaw.
- 5. Wash the potatoes thoroughly.
- 6. Steam the potatoes in a pot with a little water for approx. 25 minutes until tender.
- 7. Bring the vegetable broth to a boil in a separate pot.
- 8. Add the peas, mint, and basil to the boiling broth.
- 9. Simmer the mixture covered for approx. 5 minutes.
- 10. Remove the peas from the broth and set them aside.
- 11. Place the peas and some of the hot broth into a blender.
- 12. Blend the mixture into a smooth puree.
- 13. Peel the cooked potatoes.
- 14. Press the potatoes through a potato ricer into a bowl.
- 15. Stir the pea puree into the potatoes.
- 16. Add the tahini (sesame paste).
- 17. Add 3 tablespoons of olive oil.
- 18. Mix everything well until creamy.
- 19. Add vegetable broth gradually until the puree reaches the desired creamy consistency.
- 20. Season the puree to taste with salt.
- 21. Serve the puree garnished with fresh basil and mint.
