🍽️ Fresh Peas with Salad Greens

Ingredients
- 800 g fresh peas
- 1 romaine lettuce
- 2 shallots
- 1 clove garlic
- 1 tbsp butter
- 1 tbsp apple cider vinegar
- 100 ml vegetable broth
- 1 handful parsley
- salt
- pepper
Instructions
- 1. Carefully remove the peas from their pods.
- 2. Rinse the peas thoroughly under running water.
- 3. Let the peas drain well in a colander.
- 4. Remove the tough stems from the salad leaves.
- 5. Wash the salad leaves thoroughly as well.
- 6. Spin the salad dry in a salad spinner.
- 7. Cut the dry salad leaves into thin strips.
- 8. Peel the shallots and the garlic.
- 9. Slice the shallots into thin rings.
- 10. Slice the garlic into thin rounds.
- 11. Heat a pan and melt the butter over low heat.
- 12. Lightly fry the shallot rings and garlic slices in the butter.
- 13. Add the drained peas to the pan.
- 14. Deglaze the vegetables with apple cider vinegar.
- 15. Pour in some vegetable broth.
- 16. Cover the pan with a lid.
- 17. Simmer the vegetables for about 5 minutes over low heat.
- 18. Remove the lid from the pan.
- 19. Add the cut salad strips to the pan.
- 20. Let everything simmer uncovered for another 3 to 4 minutes.
- 21. Wash the parsley thoroughly.
- 22. Spin the parsley dry.
- 23. Pluck the parsley leaves from the stems.
- 24. Chop the parsley leaves coarsely.
- 25. Fold the parsley into the finished pea mixture.
- 26. Season the dish to taste with salt and pepper.
- 27. Serve the warm pea dish immediately.
